Connie Singam Hi, I am Connie Singam and I run Spice N Wine. We serve a uniquely Singapore mix of North Indian, South Indian and Western dishes cooked with the freshest of ingredients. Baby-Sitting

I am taking on some baby-sitting responsibilities. Even as you read this I am in Perth, Australia, baby-sitting five-year old Grace and two-year old Mathew (see picture) while their mother, my niece Sonia, awaits the birth of her third child.

What a change of phase and pleasures! And weather!

Brunch on Sundays

Updated on July 7, 2006 on 3:42 am | Category: My Events | No Comments

Brunch on Sundays : time 10.30 – 12.00 a.m. every Sunday.

Appam ( or hoppers), one of our brunch items, is served the whole day on Sunday at Spice N Wine. Like breads ( nans and so on ) appams can be enjoyed with any curry. I love it and on Sundays I eat it for breakast ( with bananas or with eggs) for lunch with chicken stew and sambal and at dinner with any curry I fancy. Kerala fish curry goes
well with ‘appam’. I could eat it at tea-time with coconut milk and sugar but then that might be a bit too much, don’t you think?!

Many South Indians grew up eating it on special occasions. One Sunday, one such Indian
feeling very nostalgic, ate six appams at one sitting.

Richard Philips, entertained a full house of appreciative dads and their families on Fathers’ day. This young man, who is a really gifted singer, volunteered his time and talents. Isn’t life full of surprises and gifts!

First Anniversary

Updated on July 7, 2006 on 3:41 am | Category: My Thoughts | No Comments

It is a year since I took over the running of the restaurant, after
telling myself that I will try it out for 6 months and after a year I
am still at it. The restaurant is my second home. I see my friends
here more often now than I used to. And I see many interesting people
as well. Life is full of surprises. So is the restaurant.

The other week, about eight Catholic priests, some local,
some visiting, came for dinner. I discovered that one of them and my
parents had come from the same part of Kerala and that he had actually
worked in my mother’s village. He also knew my cousin who was the
headmaster of the secondary school in the village. Talk about ‘ six
degrees of separation’!!

Harka is back

Harka, the chef, I wrote about in my last newsletter, is back with more
harrowing stories of his visit to Nepal. The transport strike forced
him to walk nine days to get to his village to see his family, for
instance, after he lost everything to the Maoist. But then Nepal is
politically and economically in crisis.

What is the excuse of some recruiting agents in Singapore for
exploiting vulnerable foreign workers? Harka has been trying to recover
his papers from the agent who brought him to Singapore. The agent
refuses to release them to him till he pays another $5,000/. This is in
addition to the initial $5,000/ that has already been paid. His
employer (we) had also paid the agent $1,500 for his services.

Harka is really being held hostage by his agent.

Father’s Day

Father’s Day falls on 11th June. We @ Spice N Wine look forward to celebrations and for this celebration I have invited a nice young man, Richard Philip and his guitar to entertain us. This is a special treat for fathers so do come and enjoy Richard’s music over dinner and drinks.

I hope to have Richard as a regular entertainer at Spice N Wine. I do enjoy his style of singing especially since I can actually recognize the melodies. See you soon.
